The Butchering Process
HOW DOES IT WORK AND WHAT DOES IT MEAN FOR YOUR ORDER?
All our animals are processed at a nearby USDA butcher shop, vacuum-sealed and frozen. The cost is included in your order. We weigh the animal when delivered to the butcher for a "live weight". Once it is initially processed, it then has a "hanging weight" which amounts to 50-55% of the live weight. [Did you know? Pastured animals lose more of their weight during butchering that feedlot animals because they have more water and fiber in their bellies!]. Depending on how they are then cut for your order, their final cut weight and the amount of meat delivered in your package is about 70-75% of the hanging weight. More bone-in cuts will mean a heavier weight but not necessarily more meat.
